DISH category: first course

INGREDIENTS for four people

  • Three left-over stale bread rolls
  • 150 g cooked left-over spinach
  • 1 egg
  • 80 g cheese
  • 100 ml warm milk
  • 100 g flour
  • 80 g butter
  • 100 g Parmesan cheese
  • Salt and pepper to taste

METHOD: Dice the bread and soak it in warm milk. Chop the spinach finely with the knife. Dice the cheese into small pieces. Place the soaked bread, the spinach and the cheese in a bowl and add flour, salt and pepper. Mix the ingredients all together and then knead the mix with moistened hands into oval balls and place on a tray. Then place a pot of salted water to boil. Cook the dumplings in the boiling water for about 15/20 minutes. Drain, put on a plate and serve covered with grated Parmesan cheese and melted butter.
