INGREDIENTI for 4 people:

  • Leftover Polenta
  • 1 mozzarella cheese
  • Half an aubergine, grilled
  • 4 fresh basil leaves
  • 2 tomatoes
  • 2 eggs
  • 4 anchovies in oil
  • Some flour
  • Some seed oil
  • Bread crumbs
  • salt

METHOD: Slice polenta(7-8mm) with a cutter or using the border of a glass. Place on each slice of polenta an anchovy in oil, a slice of grilled aubergine, one of tomato, one of mozzarella cheese and a basil leaf Cover each slice of garnished polenta with another slice. Bread it all, dipping it twice in the flour, in the scrambled egg and then in the bread crumbs. Heat the peanut oil in a pan, fry the pieces for 3 minutes per each disc, until they become golden.

WINE: Soave classico
